We are so lucky to have a peach tree on the farm that loves to produce for us. Our tree is probably between 15-20 years old, so when it gives us fruit it doesn’t disappoint. As soon as we pick all the fruit, I instantly start running through recipes and tweaking them until I find something I like. This year I decided to try a peach muffins recipe, and I came across two different ones that turned out delicious. I will say the peach flavor is not as strong as I would like, but it is a great way to use up some peaches and make something that everyone in the family will munch on.
Both these peach muffins recipes are very different, so be sure to experiment and see which is your favorite. I made one without a topping and another with a streusel topping, but you could add the streusel to both or leave it off if you prefer. Baking is supposed to be fun, so I hope you enjoy making these, and of course eating them!
Peach Cinnamon Streusel Muffins
Ingredients:
Filling:
– 2 cups all-purpose flour
– 1½ teaspoon baking powder
– ½ teaspoon baking soda
– 1 teaspoon ground cinnamon
– ¼ teaspoon salt
– 1 large egg
– 1 cup brown sugar
– ¾ cup milk
– ¼ cup unsalted butter, melted
– 1 teaspoon vanilla extract
– 1½-2 cups peeled and diced fresh peaches
Streusel Topping:
– ⅓ cup all-purpose flour
– 1½ tablespoon of granulated sugar
– 1 tablespoon ground cinnamon
– 2 tablespoons of unsalted butter, softened and cubed
Instructions:
1) Preheat oven to 350°F. Grease or line a muffin pan and set aside.
2) In a large bowl, sift or mix the flour, baking powder, baking soda, cinnamon, and salt until well combined. This will be your dry mixture.
3) In another bowl, whisk or blend what will be your wet ingredients, egg, brown sugar, milk, butter, and vanilla extract. Be sure to get this combined well.
4) Add your wet ingredients to your dry ingredients and combine.
5) Fold in your peaches gently.
6) Fill your muffin cups 3/4 the way full. This recipe was enough for me to fill a 12 cup pan perfectly.
7) This step is optional. In a small bowl, combine your flour, sugar, and cinnamon for your topping. Add in your butter cubes and mash them in with the back of a fork. Continue to press the butter into the mixture until you get a slight crumble. Then take your topping and sprinkle over your batter in the cups. It is completely optional if you want to put it on thick or only do a thin layer.
8) Place on center rack and bake for 15-20 minutes.
9) Cool muffins on a cooling rack for 15 minutes then remove from pan and let cool completely.

Hydrated Peach Muffins
Hydrated because if you are like me you cringe at the word moist. Let’s see what other words we can use to describe this recipe…not dry, dewy, spongy, yummy, wet, LOL…if you have some others I would love to hear them.
Ingredients:
– ½ cup unsweetened applesauce
– ½ cup plain Greek yogurt
– 1 large egg
– 1 teaspoon vanilla extract
– ⅓ cup sugar
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon ground cinnamon
– ½ teaspoon salt
– 2 cups peeled and diced fresh peaches
Instructions:
1) Preheat oven to 350°F. Grease or line a muffin pan and set aside.
2) In a large bowl, mix together the applesauce, yogurt, egg, vanilla, and sugar.
3) Add in flour, baking soda, cinnamon, and salt and stir until all ingredients are combined. Your dough/batter will be a bit tough or thick. Keep stirring until everything is combined…I promise it will turn out fine.
4) Fold your peaches into your dough/batter gently.
5) Fill your muffin cups 3/4 the way full. This recipe was enough for me to fill a 12 cup pan perfectly.
6) At this point you can add in the topping from the above recipe if you so desire. (Optional)
7) Place on center rack and bake for 20 minutes.
8) Cool muffins on a cooling rack for 15 minutes then remove from pan and let cool completely.
