Where are my freezer meal peeps at? This recipe is sure to please…trust me! I don’t normally like veggie soup, and I might have ate 2-3 bowls of this the first night we made it. Veggie Soup with Beef Freezer Meal Recipe for the Crockpot
Ingredients:
1 lb. lean ground beef
1 lb. (8 large) carrots, peeled and sliced
1 medium yellow onion, diced
1 large zucchini, ends cut off and chopped
2 medium tomatoes, cored, seeds removed, and chopped
24 oz pasta sauce
4 cups chick broth (needed on day of cooking)
Supplies:
1 gallon-sized plastic freezer bag
Prep:
1) Label your freezer bag (Veggie Soup), cooking instructions (write what ingredients you need to add on day of cooking), and use by date (around 3 months)
2) Add all ingredients to freezer bag except the broth
3) Remove as much air from the bag, seal it, and lay flat in the freezer
Cooking:
1) The night before cooking, move the freezer bag to the refrigerator to thaw
2) The day of cooking, add contents of bag to crockpot with chicken broth
3) Cook on low for 6-8 hours
4) Break beef apart and stir
5) Enjoy
This recipe yields 6 servings and is still yummy warmed back up for leftovers.
